This Amarone della Valpolicella has been greatly awarded over the years and it rightly has been. It is an elegant, refined and full body Amarone with great balance and really pleasant flavours. The winery itself states that the priority is to preserve the great potency of their grapes and the results confirms it. The grapes are withered for 70/90 days (off-vine appassimento or drying process). The grape must undergoes a slow fermentation (about 15 days) at a controlled temperature in order to maximise flavour preservation. The affinamento or ageing process begins with 36 months of in 225 litres barriques (50% new), and ends with at least 2 years in bottle to complete maturation. Many end users will wait another 3 to 10 years before consumption. It has a great ageing potential of 15-20y and becomes smoother and more complex with time.
